Ingredients:

Directions:

  1. Start rice.
  2. Heat oil in a large skillet over medium heat until hot. Add pimientos or red peppers, green peppers and garlic and saute for two minutes.
  3. Add the black beans, vinegar and hot sauce to taste.
  4. Bring the mixture to a boil, then reduce heat to low, cover and simmer for five minutes.
  5. Stir in rice and cilantro.
  6. Taste and adjust seasonings.
