Caramelized Onion and Horseradish Mashed Potatoes

Ingredients:

Directions:

  1. Melt 1 tablespoon butter in a medium nonstick skillet over medium-high heat.
  2. Add onion and sugar; sauté 10 minutes or until caramelized.
  3. Remove from heat and stir in vinegar if desired.
  4. Place potatoes in a saucepan and cover with water.
  5. Bring to a boil; reduce heat and simmer for 15-20 minutes or until tender.
  6. Drain and return potatoes to pan.
  7. Add 3 tablespoons butter and milk; mash to desired consistency.
  8. Cook 2 minutes or until thoroughly heated through, stirring constantly.
  9. Combine Dijon mustard and remaining ingredients in a small bowl, stirring with a whisk until blended.
  10. Add Dijon mustard mixture and caramelized onion mixture to potato mixture, stirring to combine.
  11. Serve.
