Ingredients:

Directions:

  1. Trim fat from roast.
  2. Rub Cajun seasoning all over meat.
  3. Brown in large skillet using the cooking oil.
  4. In crock pot combine undrained tomatoes, onion, celery, tapioca and garlic.
  5. Place roast on top.
  6. Cover and cook on low setting for 10 hours.
  7. Slice meat and serve with sauce over rice.
