Ingredients:

Directions:

  1. Sprinkle salt on the bottom of a large wooden bowl and generously rub the sides and bottom with the garlic clove.
  2. Add the mustard, lemon juice, and cayenne pepper to taste.
  3. Stir with wooden spoon until salt dissolves.
  4. Rinse the lettuce or greens well.
  5. Dry with paper towel and tear the lettuce into bite-sized pieces and place them into the bowl.
  6. Sprinkle with grated cheese.
  7. Add anchovies if desired.
  8. Slice the egg and sprinkle over the salad.
  9. Gently toss salad.
