Butterscotch Zucchini Bread

Ingredients:

  • 1 cup oil
  • 2 tsp. vanilla
  • 2 cups sugar
  • 2 cups flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. ginger
  • 1/2 tsp. nutmeg
  • 1 (3oz.)package. butterscotch pudding mix
  • 1 cup nuts or raisins or 1 cup dates
  • 2 cups confectioner's sugar
  • 2 tbsp. lemon juice
  • 1/4 cup butter

Directions:

  1. Mix bread ingredients.Pour into 2 greased ,floured,wax paper lined pans.
  2. Bake 1 hour at 350degrees.
  3. Blend ingredients for lemon frosting and spread over tops of loaves after cooled.
  4. Note*I baked in 2 8x4 pans and sprayed them with Baker's Joy.
  5. Since ovens vary,I started checking mine with toothpick,after about 45-50 mins.
  6. Cooled in pans about 15 mins.and turned out on rack to cool.
  7. I didn't use any of the fruit nor did I frost the loaves.
