Butterscotch Zucchini Bread

Just a really nice bread,full of flavor and moist.
Ingredients:
3eggs
1cup oil
2 tsp.vanilla
2cups grated zucchini
2cups sugar
2cups flour
1 tsp baking soda
1 tsp.salt
1 tsp.cinnamon
1/2 tsp.ginger
1/2 tsp.nutmeg
1 tsp.baking powder
1/2 cup rolled oats(quick)
1(3oz.)pkg.butterscotch pudding mix
1 cup nuts or raisins or 1 cup dates
lemon frosting
2 cups confectioner's sugar
1/2 tsp.grated lemon peel
2 tbls.lemon juice
1/4 cup butter
Directions:
1. Mix bread ingredients.Pour into 2 greased ,floured,wax paper lined pans.
2. Bake 1 hour at 350degrees.
3. Blend ingredients for lemon frosting and spread over tops of loaves after cooled.
4. Note*I baked in 2 8x4 pans and sprayed them with Baker's Joy.
5. Since ovens vary,I started checking mine with toothpick,after about 45-50 mins.
6. Cooled in pans about 15 mins.and turned out on rack to cool.
7. I didn't use any of the fruit nor did I frost the loaves.
