Banana Bread, Witchywoman Style

Ingredients:

  • 2 eggs
  • 1/3 cup buttermilk
  • 1/2 cup canola oil
  • 1 tsp rum extract
  • 1 1/2 cups firmly packed dark brown sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Preheat oven to 350 degrees. Spray 4 mini loaf pans with non-stick cooking spray.
  2. Blend eggs, buttermilk, oil and bananas together until smooth. Blend in brown sugar and rum extract.
  3. Sift flour, baking soda, salt, cinnamon, ginger and nutmeg together in a small bowl. Add to creamed banana mixture. Stir until just combined.
  4. Pour into prepared mini loaf pans and bake 35-40 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool in pans for 5 minutes, remove and cool completely on a wire rack.
