Ingredients:

  • 1 1/2 lbs butternut squash
  • 1 large apple
  • 3 tbsp butter
  • 2 tbsp sugar , free maple syrup. you can use real maple syrup. because of diet restrictions i used the free- (splenda)

Directions:

  1. Spray a glass baking dish with Pam or similar product.
  2. Preheat oven to 400 degrees.
  3. Cut the squah in half, peel & scoop out pulp and seeds.
  4. Cut into half inch slices. Arrange in a glass baking dish.
  5. Core the apple (peel if desired) and cut into half inch slices. Place on top of the squash.
  6. Melt butter, add syrup and drizzle over the squash & apple.
  7. Cover tightly with aluminum foil.
  8. Bake at 400 degrees for about 45-50 minutes, or until the squash is tender.
