Ingredients:

Directions:

  1. Combine rice and brocolli in a large mixing bowl.
  2. Cook mushrooms,onion,garlic,in oil over medium heat,until onion is tender crisp.
  3. Add salt,pepper,and nutmeg.
  4. Stir mixture into rice and brocolli;mix well.
  5. Spoon into shallow 2 quart pan.
  6. Beat egg yolks with milk.
  7. Add cheese.
  8. Beat egg whites till stiff but not dry.
  9. Fold into yolk mixture.
  10. Spread over rice mixture.
  11. Bake at 350 degrees about 30 minutes until mixture is hot and bubbly and top is lightly brown.
  12. Cool about 15 minutes and cut into squares.
