Directions:

  1. Steam 5 cups of broccoli for 5 mins until slightly tender. Take 3 tablespoons of Smart Balance Light Butter and sautee onions, mushrooms, garlic, celery in a pan and sweat out veggies for 7 to 10 minutes. Salt and pepper the mixture to taste.
  2. Melt cheese, milk and soup in a microwave until mixture is smooth - about 5 to 10 minutes. Stir mixture into a large bowl and add the vegetables to mixture.
  3. Coat everything evenly and then take a casserole dish or large 9x12 pan and spray coat with Pam or some other vegetable baking spray. Add mixture to the pan. Bake in a 350 degree oven for 1 hour. Make sure to sprinkle half cup of low fat cheese on top of mixture prior to setting it in the oven.
