Ingredients:

  • 1/2 tsp olive oil
  • 1/4 small onion, chopped
  • 1 medium egg
  • 4 cherry tomatoes, diced

Directions:

  1. Chop zucchini and cook in olive oil
  2. Chop onion and add to aucchini
  3. Mix together 1 egg and 2 egg whites and add to pan
  4. When halfway cooked, add cherry tomatoes
  5. Add salt and pepper to taste
