Ingredients:

  • 1/2 cup (125 ml) packed brown sugar
  • 1/2 cup (125 ml) vegetable shortening
  • 1/4 cup (50 ml) butter or margarine, softened
  • 1 egg
  • 1 teasp. vanilla
  • 1 cup (250 ml) whole wheat flour
  • 1/2 teasp. (2 ml) baking soda
  • 1/2 teasp. (2 ml) ground cinnamon
  • 1/4 teasp. (1 ml) ground ginger
  • 1/4 teasp. (1 ml) ground cloves
  • 1/4 teasp. (1 ml) salt
  • 1 cup (250 ml) finely chopped cooking apple
  • 1 cup (250 ml) chopped pecans

Directions:

  1. Heat oven to 350F (180C).
  2. Lightly grease cookie sheets. Set aside.
  3. In a large mixing bowl, combine the sugar, shortneing, butter, egg and vanilla.
  4. Beat at medium speed of an electric mixer until light and fluffy.
  5. Add oats, flour, baking soda, cinnamon, ginger, cloves and salt.
  6. Beat at low speed until a soft dough forms.
  7. Stir in the prunes, apples and pecans.
  8. Drop dough by heaping spoonfuls 2 inches (5 cm) apart onto the prepared cookie sheets.
  9. Bake for 8 to 12 minutes, or until golden brown.
  10. Cool completely before storing.
