Ingredients:

Directions:

  1. Wash potato and take spots off. I usually microwave it for a minute or so to cut down on sauteing time.
  2. Cube the partially cooked potato.
  3. Wash and chop peppers, onion, garlic.
  4. Wash and cube mushrooms, eggplant and tomato.
  5. Reserve all vegies and add one at a time.
  6. Warm the oil in the skillet over about medium heat.
  7. Saute the peppers first for a few minutes in the skillet; season with salt and pepper.
  8. After a few minutes, add potato, stir.
  9. After a few more minutes, add onions and garlic; stir.
  10. While sauteing vegies, break eggs into a bowl, stir in milk and season with salt,
  11. Pepper and basil. Reserve until all vegies are added.
  12. After a few more minutes, add mushrooms and eggplant; continue stirring.
  13. After mushrooms get very soft and a little brown, add tomatoes to just warm.
  14. Push vegies to one side of pan and put the butter on the empty side and melt.
  15. Pour eggs into empty side and let cook for a minute or so.
  16. When eggs are partially cooked and formed, mix into vegies.
  17. Break apart slice of cheese and lay across the top.
  18. Turn burner down to very low and cover.
  19. Let the cheese melt.
  20. Yum!
  21. I serve this with fresh, soft, yummy Lebonese or Bilati (spelling?) bread
