Ingredients:

Directions:

  1. Whisk together egg and egg whites (or 4 egg whites if yolk is undesired).
  2. Spray non-stick pan with PAM* and saute onions (on high heat).
  3. When onions begin to stick to pan, add tomato, pepper, and mushroom (the tomato's juices will help with the sticking).
  4. Stir and when vegetables start sticking to the bottom, set aside, sprinkle in salt and some of the black pepper and cayenne, and stir in.
  5. Put vegetables into separate bowl and spray pan again*.
  6. Pour the egg mixture into pan and scramble (on high heat).
  7. Mix in with vegetables and add rest of seasonings to taste.
  8. Divide filling into four equal parts and spoon onto a small tortilla or flat bread**.
  9. *Two 1-sec. sprays of PAM adds around 3-4 calories each burrito.
  10. **I use an original Flatout for Kids, with 60 calories per flatout.
  11. Actual calories if Flatout is used: around 105.
