Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Place the pork roast in a roasting pan and put pieces of the chorizo or linguicia on and around it.
  3. Add the vinegar, peppers and garlic to the roasting pan.
  4. Add water until roast is halfway covered.
  5. Cover and bake 1 to 1 1/2 hours.
  6. Remove cover and add the potatoes, carrots, and onions.
  7. Cover and let bake another 15 minutes or until the carrots are tender, (but not mushy).
  8. Remove cover; top with stewed tomatoes and bake 20 minutes, uncovered, to brown the top of the roast.
