  1. Bob’s Tomato Basil Soup
  2. Serves 6, Cook time: 30 minutes
  3. 1/4 c onions, diced
  4. T fresh garlic, minced
  5. T canola oil
  6. T salt
  7. T black pepper
  8. Large fresh tomatoes, cored
  9. Can diced tomatoes in juice, 28 oz
  10. T dry basil
  11. T fresh basil
  12. C heavy cream
  13. C water
  14. 1/2 c Romano cheese, grated
  15. C parmesan cheese, grated
  16. In a large heavy pot, sauté the onion and garlic until translucent. Add fresh tomatoes, canned tomatoes, dry basil and water. Bring to a boil and reduce heat to simmer for 10 minutes. Add the cream, fresh basil, salt and pepper and return to a simmer for 10 minutes. Shut off the heat and stir in cheeses. If a smooth soup is desired, puree with a stick blender.
