Ingredients:

Directions:

  1. Pour water and blueberries into pan and warm blueberries until they plump.
  2. Meanwhile, mix wet ingredients. Reserve 1/2 tbsp oil for pan.
  3. Sift dry ingredients together. Pour wet into dry and mix.
  4. After blueberries plump and the water starts turning purple, remove from heat and gently mix in a piece of ice or two until cooled. Fold into pancake mix.
  5. Warm pan to medium low heat. Use 1/3 cup measure to pour pancakes into pan. Cook 2-5 minutes on each side or until golden brown.
  6. Serve immediately with syrup, whipped cream, fruit or jam. Yum!
