Blue Boar's Carrot and Raisin Salad

Ingredients:

  • 1/2 cup raisins
  • 2/3 cup diced celery
  • 3 tbsp pineapple juice , plus
  • 1 tsp pineapple juice , plus
  • additional cut-up pineapple
  • 1/2 cup mayonnaise
  • 1/2 tsp salt
  • 1 tbsp sugar

Directions:

  1. Shred all the carrots; set aside.
  2. Combine raisins, celery, pineapple juice, pineapple, mayonnaise, salt and sugar.
  3. Pour over shredded carrots and mix thoroughly.
