Ingredients:

  • 1 cup raisins
  • 1 tbsp lemon zest
  • 1/2 tbsp lemon juice
  • 1/4 tsp confectioners' sugar
  • 1/2 tsp salt
  • 1/2 cup mayonnaise
  • 1/2 cup pecans, chopped (optional)

Directions:

  1. Grate carrots coarsely. Add remaining ingredients and mix well. Refrigerate.
