Ingredients:

  • filling
  • 2/3 cup sugar
  • 1 tbsp. cornstarch
  • pinch salt
  • topping
  • 1 cup flour
  • 2 tbsp cornmeal
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup cold butter
  • 1/3 cup buttermilk

Directions:

  1. To make fi;ling: Whisk together the sugar,cornstarch,cinnamon and salt in large bowl. Add the blackberries to the bowl and very gently toss to coat with the sugar mixture. Drizzle with the lemon juice. Pour the filling into a 12x8 baking dish. Bake 25 min,or until the filling is hot and bubbling around the edges
  2. To make topping:
  3. Whisk together the flour,sugar,cornmeal,baking powder,baking soda and salt. With pastry blender or fork,cut in butter until it is the size of small peas. Stir in the buttermilk until no dry pockets remain.
  4. Remove the cobbler from the oven and drop 6 spoonfuls of toppping on top of filling,using all the topping. Do not let topping mounds touch. Sprinkle them lightly with sugar. Bake 15-18 mins,until the filling is hot and bubbly and topping is brown. Cool on wire rack for about 20 mins. Serve warm,topped with a scoop of vanilla ice cream.
  5. Bake temperature for the filling-350-375
  6. Bake temperature once biscut topping is added 400-425
