Ingredients:

  • 2 1/2 cups dried peas
  • 1/3 cup olive oil
  • 1/2 cup parsley

Directions:

  1. Soak black eyed peas or bring to boil and let sit for 1/2 hour. Cook for 20-30 minutes.
  2. Meanwhile, chop peppers, onion and parsley.
  3. Toss drained beans with other ingredients and chill.
