Bio Salmon Tartare

Ingredients:

  • 3/4 lb of organic salmon
  • 2 tb spoon of french shallot (small little white soft tasting onions)
  • 3 tb spoon of fresh herbs (basil, fenel, chive, tarragon)
  • 1/3 cup of lobster perfumed oil (add a base of lobster juice to olive oil)
  • 2 tb spoon of yuzu juice (japanese lemon, don'tsp bother, use regular)
  • salt and pepper (to taste)

Directions:

  1. 1. Cut off the brown part of the salmon and remove the edges, then cut it into really small cubes (be nice, don't use the slapchop :P)
  2. 2. Chop the french shallots and the fresh herbs, then add the lemon/yuzu juice and the lobster perfumed oil. Dump in some soya sauce
  3. 3. Mix well and add the salt and pepper
  4. 4. Enjoy !
