Ingredients:

  • 1/4 lb maple bacon , cut into 1/2 inch pieces
  • 2 large onions
  • 2 cloves garlic
  • 3 tbsp flour
  • 2 lbs beef chuck
  • 1/2 cup cognac
  • 3 cups beef broth
  • 4 sprigs thyme
  • 1/4 cup red wine

Directions:

  1. Cook bacon until crisp, add onions, shallots, and garlic, cook till tender.
  2. Brown meat after floured.
  3. Combine with rest of ingredients and cook until meat is tender.
  4. Brown mushrooms and add with red wine to stew.
  5. Simmer 10 minutes and serve.
