Ingredients:

  • 1 1/2 cups oats
  • 1/3 cup packed brown sugar
  • 3/4 tsp salt
  • 1 tbsp flax seed
  • 2/3 cup soy milk

Directions:

  1. Preheat oven to 400
  2. In a bowl, combine the oats, flour, brown sugar, baking powder and salt.
  3. In another bowl, combine flax + 3 tbsp warm water, milk, applesauce and honey.
  4. Stir into dry ingredients just until moistened.
  5. Fill greased or paper-lined muffin cups two-thirds full.
  6. Bake at 400 degrees F for 15-18 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before removing from pan to a wire rack.
