Beefy White Rice & Parmesan Cheese

Ingredients:

  • 1 medium onion, chopped
  • 2 tbsp butter
  • 1 (10 1/2 oz) can campbell's beef consomme
  • 1 3/4 cups water
  • 1 cup long- grain white rice
  • 1/4 tsp nutmeg
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Directions:

  1. Melt butter over medium high heat, add chopped onion and stir until onion is soft, about 3-4 minutes.
  2. Add sirloin and stir until mostly cooked through, about 7-8 minutes. Do not drain, if using sirloin there will not be much fat.
  3. Add one can of beef consomme, then fill the can with water and add to pan. The water may froth in the can, so I added a little extra water to compensate. Stir through and add the rice, nutmeg, cayenne pepper, garlic powder, salt and black pepper.
  4. Cover and simmer for 25 minutes. Add parmesan cheese and stir through before serving.
