Beef Barley Soup

Ingredients:

  • 1 cup barley
  • 3 cups beef stock
  • 1 tbsp tomato paste
  • 1 lb carrots
  • 1 medium onion
  • 1 14.5 oz can diced tomatoes
  • 1 cup corn
  • salt and pepper to taste
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • note: you could really add anything here you wanted, lima beans or the like.

Directions:

  1. Season the beef shank and brown on each side. Set aside.
  2. Sautée onions until soft. 5 minutes or so.
  3. Add stock and 4-5 cups water, along with carrots and the tomatoes. Add spices. Bring to a boil and lower to simmer. I would leave it simmering for at least 2-3 hours.
  4. Prepare barley; add potatoes, green beans and corn.
  5. Pull apart beef shank into nice bite-sized pieces.
  6. Check to make sure potatoes are done. This should take in the neighborhood of 30-45 minutes.
  7. When barley is finished, drain and add to soup.
  8. Enjoy!
