Bbq Breakfast Pepper Baked Eggs

Ingredients:

Directions:

  1. Preheat BBQ to medium high.
  2. Cut the pepper in half and carefully remove the seeds and ribs.
  3. Sauté the onions and the mushrooms in the olive oil and add the Chicken rub spice when almost done. Add the fresh thyme.
  4. Grill the peppers, turning twice, until they just start to get soft, about 10 minutes.
  5. Place half of the mushroom, onion mixture in each pepper half. Crack an egg into each pepper and sprinkle with pepper.
  6. Close the lid of the grill and cook until the egg sets. Add grated cheese on top until melted.
  7. Serve and enjoy!
