Ingredients:

Directions:

  1. Heat a large sauce pan to medium heat.
  2. Add olive oil.
  3. Saute the onion and garlic until soft.
  4. Add everything else EXCEPT fish to the pan.
  5. Add water if needed to cover the vegetables.
  6. Bring to a boil then simmer , covered for 25 minutes.
  7. Add fish and cook for 4 more minutes
  8. Sprinkle with parsley.
  9. Serve immediately with some crusty bread..
