Barley and Mushroom Pilaf

  1. Place barley in a strainer; rinse and dreain well. In a large saucepan over hight heat, bring salted water to a boil. Stir in the barley and return to a boil. Cover, reduce heat to low, and simmer for about 40 minutes or until the barley is tender. Remove from heat and let cool.
  2. Preheat oven to 375. Spray 7x11-inch casserole with cooking spray.
  3. Heat the oil in a large nonstick skillet on medium heat. Add the onions, mushrooms, and red peppers; saute for 5 to 7 minutes or until onions are golden.
  4. In a large bowl, combine the cooked barley with the sauteed vegetables. Add broth and parsley; mix well. Spread the barley mixtuere evenly in the prepared pan. Baked covered for 15 to 20 minutes.
