Ingredients:

Directions:

  1. Sauté onion, garlic and red pepper in olive oil until soft, about 5 minutes.
  2. Add vegetable broth, water, tomatoes, rice, red pepper flakes, salt, and pepper and bring to a boil.
  3. Simmer for 45 minutes.
  4. Whisk in peanut butter.
  5. Enjoy!
