Ingredients:

  • 1 cup bulgur
  • 1 cup water
  • 2 tsp olive oil
  • 1 1/2 cups onions
  • 8 oz mushrooms
  • 4 cups spinach
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions:

  1. In a med saucepan, bring broth, bulgur, and water to a boil over med-high heat. Cover and simmer until bulgur is tender, abt 10-12 mins.
  2. Meanwhile, heat oil in large skillet over med-high heat. Add onion until golden and tender abt 8 mins. Add mushrooms, spinach, salt, pepper. Cook until spinach is wilted and mushrooms are tender.
  3. Spoon bulgur into skillet over low heat intil combined.
