  1. Toast walnuts in oven for 5-8 minutes.
  2. Add to dried fruit and soak overnight in the brandy or rum.
  3. The next day, preheat oven to 350 degrees prepare a 9X5 inch loaf pan by coating with cooking spray.
  4. In medium bowl, whisk the flour with baking soda, cinnamon and salt. In another bowl, combine sugar, eggs and oil. Beat at high speed until light in color and creamy in texture. Add the mashed bananas and vanilla, and beat until smooth. Stir in dry ingredients and blend thoroughly. Fold in the mixed fruit, nut mixture including liquid.
  5. Pour batter into prepared loaf pain. Bake in the middle of the oven 60-70 minutes, or until the top is springy and a cake tester inserted in the center comes out clean. Let cool in pan for 10-mins before turning onto rack to cool completely.
