Ingredients:

Directions:

  1. Combine all ingredients and toss lightly.
  2. Chill mixture and serve in lettuce cups.
  3. (To prevent bananas from turning brown marinate in lemon or lime juice for a few minutes.).
  4. Candied pecan variation: Combine first 4 ingredients in a medium sauce pan and cook over medium heat until sugar dissolves 5 minutes.
  5. Stir constantly and add pecans and vanilla, cook until syrup is absorbed 10-12 minutes.
  6. Place pecans on a baking sheet lined with wax or parchment paper and allow to cool.
  7. Chop up and add desired amount to salad.
  8. Extra pecans may be stored in an airtight container for 1 month.
