Banana Therapy Coffee Cake

Ingredients:

  • 2 1/2 cups flour
  • 1 cup brown sugar plus 1/4 for sprinkling over banana
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp clove
  • 3/4 cup cooking oil
  • 1 cup milk
  • 1 tsp soda dissolved in milk
  • 2 -3 bananas

Directions:

  1. Preheat oven to 350.
  2. Grease and flour 9x13 pan.
  3. Mix all of the dry ingredients together.
  4. Stir in oil with a fork until mixture is crumbly.
  5. Remove 1 cup of the crumbs and set aside to use for a topping.
  6. Stir egg and milk-soda mixture into dry ingredients.
  7. Beat until smooth.
  8. Pour into prepared pan.
  9. Slice banana's into halves then slice halves lengthwise into about 4 slices per half.
  10. Place on top of batter in pan, sprinkle bananas with brown sugar and then top with reserved crumbs.
  11. Bake for 40-45 minute.
