Ingredients:

  • 1/2 cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 2 1/2 cups spelt flour
  • 1/8 tsp salt
  • 3/4 cup walnuts
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 375 degrees.
  2. Beat sugar and butter, add eggs, vanilla and mix well.
  3. Combine flour, soda and salt and add to mixture.
  4. Hand mash bananas, and fold into batter along with nuts.
  5. Pour into muffin tins with paper liners. Bake for 20-25 minutes.
  6. Makes 18-24 muffins.
