Ingredients:

  • 2 tbsp. canola oil
  • 1 egg
  • 1/2 cup skim milk
  • 3/4 tsp. vanilla extract
  • 1/2 cup quinoa
  • 1 3/4 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt

Directions:

  1. Preheat ove to 375 degrees.
  2. Combine mashed bananas with wet ingredients and mix well.
  3. Mix dry ingredients in another bowl.
  4. Combine mixtures until combined but don't stir too much.
  5. Grease muffin pan.
  6. Spoon batter evenly into 12 cups.
  7. Bake about 16 minutes, or ntil knife inserted in center comes out clean.
