Gluten-free banana muffins. Quinoa should be quinoa flakes. Ingredients:
2 bananas |
2 tbsp. canola oil |
1 egg |
1/2 cup skim milk |
3/4 tsp. vanilla extract |
2/3 cup brown rice flour |
1/2 cup quinoa |
1 3/4 tsp. baking powder |
1/2 tsp. cinnamon |
1/2 tsp. salt |
Directions:
1. Preheat ove to 375 degrees. 2. Combine mashed bananas with wet ingredients and mix well. 3. Mix dry ingredients in another bowl. 4. Combine mixtures until combined but don't stir too much. 5. Grease muffin pan. 6. Spoon batter evenly into 12 cups. 7. Bake about 16 minutes, or ntil knife inserted in center comes out clean. |
