Ingredients:

Directions:

  1. In a bowl, cream butter and sugar. Add eggs; mix well. Combine bananas and buttermilk. Combine flour, baking powder, baking soda and salt; add to creamed mixture alternatively with banana mixture. Stir in potatoes and walnuts.
  2. Transfer to two greased 9-in. x 5-in. loaf pans. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 loaves.
