These muffins are full of good natural ingredients, and they make a great breakfast food that can be eaten on the run. From First Meals by Annabel Karmel.
Ingredients:
2 cups bran flakes
1 1/4 cups milk
1 cup whole wheat flour
1/2 teaspoon salt
1 tablespoon baking powder
4 tablespoons butter
1/4 cup superfine sugar
1 egg
2 bananas, mashed
1/2 cup raisins
Directions:
1. Soak the bran flakes in the milk for 10 minutes. Sift together the flour, salt, and baking powder.
2. Cream the butter and sugar, then beat in the egg. Stir in alternate spoonfuls of the soaked bran flakes and the flour mixture. Gently fold in the mashed bananas and the raisins.
3. Line a muffin tin with fluted paper cups and half fill each with the mixture. Bake in the 350 degree F preheated oven for 30 minutes.
