Banana Buttermilk Pancakes

Ingredients:

  • 2 eggs
  • 1 cup flour
  • 2 cups buttermilk ( start out with 1 3/4 cups, until you decide how thin or thick you want your batter to be)
  • 4 tbsp oil
  • 2 tbsp sugar
  • 1 tsp salt
  • 1/2 tsp nutmeg

Directions:

  1. Beat all ingredients together until smooth and fluffy.
  2. (The more air in the batter, the lighter the pancakes.) Pour about 1/4 cup onto hot griddle for each cake.
  3. Turn when batter bubbles.
  4. Cook until lightly brown.
  5. Serve with warm maple syrup.
