Pecan Banana Muffins

Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Line muffin pan with baking cups, no need to grease.
  3. BATTER: Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice in a bowl.
  4. Set bowl aside.
  5. In a separate bowl, mash bananas.
  6. Add oil, sugar, and eggs to bananas.
  7. Pour flour mix into banana mix, and gently stir (batter should be lumpy).
  8. Add 2 cups (about 8oz) pecans to batter and mix well.
  9. Set bowl aside.
  10. TOPPING: In a separate bowl, Combine remaining pecans, margarine, and brown sugar. Mix well.
  11. Set bowl aside.
  12. BAKE: Fill each cup half full with batter.
  13. Top each cup with 1T of pecan topping.
  14. Bake for 20 minutes.
  15. Cool on wire rack.
  16. Repeat.
  17. ENJOY.
