Ingredients:

  • 1 3/4 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup splenda, granular
  • 1/3 cup butter
  • 1/2 cup egg beaters
  • 1/3 cup. milk
  • 1/2 cup nuts

Directions:

  1. Grease bottom only of loaf dish.
  2. Combine flour, baking powder, baking soda, and salt. set aside. mash bananas & lemon juice. set aside.
  3. Beat splenda and butter until light & fluffy. add eggs 1 [1/4 c] at a time, beating well each time.
  4. Alternately stir in milk & dry ingred. fold in bannas & nuts last
  5. Pour into loaf dish. cover ends with 2 in strips of foil. place loaf dish on inverted saucer in mw oven.
  6. Mw 70% 8-10 min. increase power to 100% for 1-2 min or mw until no uncooked batter can be seen thru bottom of dish and wooden pick comes out clean. cool on counter top 10 min, remove from loaf dish.
