Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup mashed banana (2 small bananas)
  • 1 tsp vanilla
  • 1 1/4 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Cream sugar and shortening till fluffy. Add eggs one at a time, beating well after each addition. Stir in banana and vanilla.
  2. Sift dry ingredients. Add to banana mixture. Mix well. Pour into greased loaf pan or 9x9 pan. Bake at 350°F for 30-35 minute (Bread will have a dark color).
