Banana Blueberry Muffins

Ingredients:

  • 2/3 cup mashed banana
  • 1 large egg
  • 1/2 cup milk
  • 1/3 cup vegetable oil

Directions:

  1. Preheat oven to 350°.
  2. Oil and flour muffin cups.
  3. Beat mashed banana and egg until creamy.
  4. Add the milk and oil; beat well.
  5. Add flour, baking soda and baking powder; beat well.
  6. Gently blend in blueberries; combine well.
  7. Spoon batter muffin tins.
  8. Bake 15 minutes or until lightly browned, then cool on wire racks.
  9. You may serve plain or frosted, or with jam or butter.
