Ingredients:

  • 2 cups rye flour
  • 1/2 cup applesauce
  • 1 pint blueberries
  • 1 egg
  • 1/2 cup sugar
  • 1 1/2 tbsp butter
  • 1/3 cup flax seed
  • 1/2 tsp baking powder

Directions:

  1. Mix bananas and soda together and set aside.
  2. Cream butter and sugar. Add egg and applesauce and mix well.
  3. Sift together flour, flax seed and baking powder.
  4. Combine banana mixture with butter mixture. Slowly mix in flour.
  5. Pour into a well-greased loaf pan and bake at 325 for at least 1 hour and fifteen minutes.
