Ingredients:

Directions:

  1. Mix cottage cheese, apricot spread, and sliced banana together; set aside.
  2. Break eggs into a small bowl; add sugar. Whisk with a fork.
  3. Coat a medium size non-stick skillet with olive oil spray and place over medium-high heat.
  4. Pour half of the egg mixture into the skillet.
  5. Rotate skillet to spread the egg into a thin layer.
  6. Cook for 2 minutes.
  7. Turn over for 1 minute.
  8. Remove from heat to a plate.
  9. Divide cottage cheese mixture in half in the center of each crepe; fold lengthwise to make a roll.
