Directions:

  1. Peel tomatoes by placing in a bowl and pouring boiling water over them.
  2. Pour off water after 10 seconds and peel off skins.
  3. Slice tomatoes into a bowl and sprinkle with chopped coriander.
  4. Cut stalk off chili pepper then slit open and remove seeds and chop finely.
  5. Combine chopped chili with lemon juice and 1 teaspoon salt.
  6. Beat in 1/4 cup olive oil then pour over tomatoes and leave 15 minutes before serving.
