Ingredients:

Directions:

  1. I like to season my tomatoes for one hour before cooking this dish, but it's not necessary.
  2. In a large bowl, add tomatoes, onion, garlic, parsley, Italian seasoning, salt, pepper, and crushed red peppers. Gently stir and let sit for one hour.
  3. Preheat oven to 400 degrees.
  4. Cook pasta according to package directions. Drain and stir into tomato mixture. Add ricotta or cottage cheese and stir.
  5. Pour mixture into a greased 9 x13 x2 baking dish. Cover with grated mozzerella and parmesean cheeses. Bake for approximately 45 minutes until lightly browned and bubbly. Let stand for 8 minutes and enjoy!
