Baked Sweet Potato Shoestring Fries

Ingredients:

  • 3 tbsp orange juice
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 2 large sweet potatoes, peeled and cut into 1/8 inch strips (about 1 1/2 lb)
  • cooking spray

Directions:

  1. Preheat oven to 400 degrees.
  2. Combine first 5 ingredients in a small saucepan; bring to a boil.
  3. Reduce heat; simmer 2 minutes or until slightly thick.
  4. Remove from heat; let cool.
  5. Combine juice mixture and potatoes in a large bowl; toss well.
  6. Remove potatoes from bowl; discard juice mixture.
  7. Arrange potato strips in a single layer on a baking sheet coated with cooking spray.
  8. Bake at 400 degrees for 30 minutes or until edges are crisp.
