Ingredients:

Directions:

  1. Sautee onion and celery and set aside. Cut the tomato in half and scoop out the pulp. Put pulp in a small bowl and mix it with sauteed vegetables, bacon and seasonings. Add cheese, mix gently and spoon into tomato halves. Place on baking sheet and bake at 325 for about 10 minutes. When it's through, let it sit for about 5 minutes before serving.
  2. I use turkey bacon and sometimes add sauteed squash or other vegetables. My favorite seasonings for this are Kosher salt, pepper, and plenty of garlic. A dash of basil or rosemary is good, also.
